Taste & Colours in Kortrijk: Dining with a View of the Chef
Dirkjan Decock and Hilde Reynaert have created a unique dining experience in Kortrijk with their restaurant Taste & Colours. Here, guests literally dine in the kitchen, witnessing firsthand how the chef prepares each dish. The restaurant is housed in a beautifully restored historic townhouse, and on sunny days, guests can enjoy their meal on the terrace in the enclosed city garden.
The duo takes pride in making everything in-house, from sourdough bread to preserved lemon. Dirkjan cooks with passion and a commitment to quality, origin, and pure flavors, presenting dishes such as salt-crusted beetroot, North Sea shrimp with kohlrabi and green apple, or capon with roasted vegetables. He also enjoys exploring unexpected flavors, surprising guests with creations like savory poffertjes with furikake (Japanese seaweed).
The menu is a seasonal surprise, based on market availability. There is no à la carte menu—on weekdays, guests enjoy the Taste Menu (4 courses, €67), while on weekends, the Taste & Colours Menu (5 courses, €79) takes center stage. The wine list reflects a preference for authenticity, offering a curated selection of Spanish, Belgian, French, and Italian wines, primarily from small-scale producers. Natural wines and specialty beers, including various geuzes, are also given a prominent place.
Taste & Colours has become a renowned name in Kortrijk’s dining scene. Dirkjan is a member of the Kortrijk chefs’ collective Café Paté and the author of the book conFOODenties, where he collaborates with fellow young chefs Felix (Het Vliegend Tapijt), Matthias (Va et Vient), and Martijn (Rebelle) to share their stories and recipes.
