Locàle is the successor of the renowned restaurant Kok Au Vin. Chef and owner Jurgen Aerts decided to close Kok Au Vin after 17 years to transform it into Locàle (by Kok Au Vin).
The restaurant was downsized from 50 to 24 guests, and the interior was revamped. However, the atmosphere and vibe remained the same. Locàle offers, just like Kok Au Vin, excellent value for money, top service, and an intimate setting. Together with Chef Hendrik Dequeker, Jurgen aims to create a relaxed atmosphere. Jurgen has swapped the kitchen for the dining area—a brilliant move. The dishes are contemporary and funky, and the ingredients are local and organic, which Jurgen makes a point of emphasizing at the table. The smaller setting allows him to personally go to the table and explain the dishes and their origins. This is also a great way to highlight the producers. Their motto is no accident: “Take your time and honour the origin.”
Jurgen is a visionary. With Locàle, he has become a pioneer by being the first restaurant in Brugge to stay open continuously. You can reserve from 12h to 20h30, offering the flexibility of a late lunch, an extended aperitif, or a lengthy dinner—everything is possible. “Experience Locàle”!
The menu focuses on meticulously crafted Snacks & Bites—dishes meant for sharing, following the rhythm of the kitchen. Highlights include 100% Iberico ‘Bellota’ Lomo Doblato, ‘Spitsbroek’ asparagus with Burrata goat cheese, and veal tartare paired with Royal Belgian Caviar ‘Platinum’. To finish, enjoy dishes like Philip Vermeulen berries with yogurt and tarragon, or the now-famous lemon tart with organic strawberries from ‘t Ambrozijn.
Locàle is a new culinary hotspot in Brugge to keep an eye on, celebrating the origin of products, communal dining, and bistronomy.
