Geert Van Hecke, known for his former 3-star restaurant De Karmeliet, wanted to return to the honest cuisine of the past with Bistro Refter. Enjoying traditional top dishes in a no-frills setting. The chef was one of the first star chefs in Belgium to open a more accessible concept alongside his gastronomic establishment, making him a pioneer in the field of Bistronomie.
Bistro Refter quickly became a great success in Bruges and beyond. The restaurant is modernly designed, with warm colors and Japanese touches. The large window with a view of the city garden creates an open and spacious feeling. Guests have partial visibility into the open kitchen and are warmly welcomed by a young and friendly team.
Louis Van Hecke, Geert’s son, is at the helm of this cozy establishment. From the kitchen, pure and flavorful dishes come out, based on the best seasonal ingredients. For starters, how about ‘Pan-fried calf’s brain paired with tomato carpaccio,’ followed by ‘Simmenthal filet mignon with pepper sauce or herb butter,’ and ending with a ‘Café Glacé’? Pure enjoyment! At Bistro Refter, the menu (3 courses for €39) is always a great choice.
Contemporary dining with respect for tradition.
