How exceptional is it that a gastro-bistro has been consistently thriving since 1999 in the culinary landscape of Bruges? Well, chef and owner Tom Mestdagh is such an impressive individual. With his very accessible and successful restaurant, Tom’s Diner, located in the city center, he scores with both the loyal “locals” and many tourists.
The interior of this attractive building was designed by Lieven Musschoot. He chose to preserve the building’s character, and coziness is still the main feature. Lots of wood and a successful blend of traditional and modern elements create a warm atmosphere. Today, there are 70 seats in various spaces. Guests can enjoy a good-quality glass of wine or some tapas at the beautiful central bar, where they can also eat.
In the open kitchen, the chefs prepare dishes based on seasonal top-quality products. At Tom’s Diner, you can enjoy an attractively priced lunch — for groups starting from 15 people — or order à la carte. There’s a selection of about 15 delicious dishes, based on classics with a creative twist. For example, mussels are combined with chili, lemongrass, and curry. Or what about a vegetarian dish with roasted cauliflower, hazelnut butter, wakame, and hummus dip? The desserts also stand out and are creatively interpreted, such as the preparation with citrus structures, lemon, lime sorbet, and candied bergamot. The dishes are served by the friendly and enthusiastic staff, accompanied by different wines that can be tasted by the glass. Tom is rocking more than ever and continues to brim with boundless energy year after year. This man is more than a worthy ambassador of Bistronomie!
