With restaurant Gramm, the popular Vlaanderenstraat now also boasts a top-notch bistronomic address. Chef Erwan Kenzo Nakata has a Japanese and Breton background. As a free-spirited autodidact, he ventured into the culinary world after studying at the Academie des Beaux-Arts. After a successful start with a crêperie in the street, he passionately sought a new direction with creative, no-nonsense dishes. The interior remains minimalist yet cozy, with black tables, a wooden bench, wooden chairs, and a large mirror displaying the wine list.
As an autodidact, Erwan opts for a style that focuses on fully extracting the essence of ingredients. He impresses with dishes where only a limited number of products are used, managing to create depth and intensity with each ingredient. The menu offers enticing 5/6/7-course options for 60€/70€/80€, such as cod with a delicate broth made from its bones, finished with nori and celeriac. A piece of rib-eye steak is served with black garlic, parsnip, and eggplant. The menu evolves with the seasons and is constantly adjusted. Every afternoon, a two-course lunch is offered for just 22€.
