At the bistro, I cook only what I truly enjoy: (blood) sausage, rabbit, beautiful fish, and seasonal vegetables.
The dishes are sometimes elegant but often hearty and rich. My passion lies at the heart of the kitchen: the hot section. This is where all the meat preparations take place. Everything that makes cooking beautiful.
Everything comes from our own kitchen. We work with whole animals, and everything is processed. You could call it artisanal, but that’s become such a trendy word. It’s not about that for me. Creating something delicious from nothing – that’s the most beautiful thing there is.
