Kitchen: For example, a salad of red and yellow beets with smoked eel, ricotta, and puffed quinoa | scallops with Jerusalem artichoke, kale, and passion fruit | puffed pointed cabbage, pickle cream, confit onion | tataki onglet, kimchi cucumber, rice crispies…

Be sure to try the “bikinis,” or a type of croque with the best ingredients—ours had Iberico ham, truffle, and mozzarella.

Drinks: The finest selection of natural wines, a few gueuze beers, and more.
